The caramel sweetness really comes through after a few seconds on the tongue, and it has that lovely crumbly texture you want from a vintage cheese. I've been nibbling a wedge with crackers each evening and it's dangerously hard to stop at one slice.

I sliced it thin for a cheese board and the crumbly texture gave way to that deep caramel finish—perfect with a bit of apple. It's rich enough that a little goes a long way, which is exactly what I wanted for a special treat.

That caramel sweetness hits you right away but then settles into something deeper and more savory. I sliced off a chunk for a late-night snack and ended up finishing half the wedge. The texture is crumbly yet creamy at the same time, exactly what I look for in an aged red.
