The texture is what got me—smooth and creamy right up until that rich, mature bite kicks in. I can tell the slate cavern aging does something special to the depth of flavor.

The cave-aging really comes through—that deep, mature bite lingers just long enough without being sharp. I sliced it thin for crackers and it melted at room temperature into pure silkiness. Already ordered another block for the holidays.
