The crystallised ginger bits are chewy and spicy, which plays beautifully against that smooth 70% dark chocolate. It’s my go-to afternoon pick-me-up, and being vegan is a nice bonus.
The lime oil gives it a bright, citrusy kick upfront, but then the honeyed cacao sweetness smooths everything out. I’ve eaten a lot of dark chocolate and this one’s texture is perfectly snappy without being waxy.
The crystallized ginger pieces melt into the chocolate just before the lime oil kicks in, so every bite has that sweet-heat-citrus cycle. I've tried a lot of dark bars and this one stands out for the balance. Gone in two sittings, which says it all.
