An Italian delicacy, these sweet pearl onions are preserved in balsamic vinegar of Modena. Balancing acidity with sweetness, they pair excellently with hard cheeses and are a wonderful addition to an antipasti platter with pre-dinner drinks.
The balance is perfect—sweet enough to snack on alone, but that balsamic tang cuts right through a sharp aged cheddar like nothing else I've tried. I added a jar to a cheese board for guests and it was emptied before the crackers were.
I’ve been spooning these straight from the jar onto a sharp cheddar board, and that sweet-tart balsamic glaze clings just right without drowning the onion. Even my vinegar-skeptic friend went back for thirds.
