Grace ★★★★★

The texture is perfectly crumbly and dense, and that extra mature bite really lets the truffle come through without overpowering the cheddar. I sliced it thin for a cheeseboard and it disappeared in minutes. This is the kind of cheese you ration so it lasts longer.

That black truffle aroma hits you the second you tear open the wrapper, and it’s woven right into that sharp, mature cheddar bite. I’ve been slicing it thin for crackers and it’s honestly made the rest of my cheese drawer feel boring.

Harper ★★★★★

The texture is so crumbly and rich, and that extra mature sharpness pairs perfectly with the subtle hint of truffle. I’ve been slicing it thin for crackers and it melts beautifully in a sandwich. Definitely worth the splurge for a cheese night.
